Trim the leaves off the cauliflower, and cut the stem so the cauliflower will sit flat.

Using a large knife, cut the cauliflower into ½-inch-thick slices, starting at the top and cutting down. If any slices fall apart, that’s okay—you can just roast them as little florets. (You should end up with 4 to 6 slices.) Season the cauliflower steaks on both sides with salt and pepper.

Place the cauliflower steaks on the prepared baking sheet. Bake for 25 minutes, or until tender when pierced with a fork.

Remove the cauliflower from the oven and let rest for 5 minutes before serving. Serve warm, garnished with parsley leaves if desired.
